Say protein and here is a bowl of chickpea, the first thing that comes to your mind. Chickpeas are superfood that are great source of protein, Vitamin B6, fibre, folate, iron and zinc. Chickpeas are also a good source of fibre that aid in digestion. They fuel up the body with complex carbohydrates that help lower or regulate the blood sugar levels. Chickpeas are also very satiating and hence give you the feeling of being full, keeping the hunger pranks at bay, thus essentially helping you with weight loss.

  • Yields: 1 Bowl

Ingredients

1/2 cup chickpea soaked overnight

1 tsp lemon juice

2 slice of tomato finely chopped

2-3 slices of cucumber finely chopped

1 pinch salt

2 dices of onion finely chopped

1 coriander to garnish

Directions

1Pressure cook about ½ a cup of chickpea that has been soaked overnight.

2Remove the cooked chickpea into a mixing bowl. Add about 1 teaspoon of lemon juice.

3Add ½ cucumber and about 1/3rd of tomato that has been finely chopped.

4Add salt to taste. Mix them well. Add some coriander to garnish. Serve with lemon wedges.
