Simply having paneer is not possible as it does not have any natural taste. It is bland. Hence having it along with soup is a good option. All the vegetables together bring out a very rich flavour. Adding paneer chunks to this makes the healthy soup a great serving.1 to 2 Servings3 count Ripe Tomatoes 2 count Carrots 1 cup Cabbage 1/2 cup Beetroot 1 count Onion 4-5 count Garlic Cloves 1-2 count Cardamom 1 dash Cinammon 2-3 count Cloves 1 pinch Chat Masala 1 pinch Red Chilli Powder 1 tbsp Coriander chopped 1/4 tbsp butter or olive oil 2 cup Water 1 pinch Salt to taste Chop all the vegetables into big chunks and put them in a pressure cooker. Add the cinnamon stick, salt and water and allow it to cook for up to 3 whistles. Post this, strain the boiled vegetables and keep this water aside for later use. Blend the vegetables in a mixer except for the cinnamon stick. Once, grounded, it is up to you to either strain it or have it unstrained (the unstrained form is more nutritious). Take a pan and put butter/olive oil to it. Put cloves, cardamom, chili and jeera powder, the blended vegetable puree and remaining boiled water, and salt to the heated oil. Put in the chunks of paneer to this and heat on low flame for a couple of minutes. Garnish with coriander leaves and there, your paneer, mixed vegetable soup is ready.
